Wheat-free cookie?

City Girl Country Girl Back Country Cookies caught my eye in the store the other day, not because of the graphics (actually, the overly-cutesy drawing made me avoid the brand for months), but because I noticed flax, pumpkin and sunflower seeds were mentioned on the label.  The ingredients are: Natural rolled oats, maple syrup, organic whole oat flour, organic canola oil, pumpkin seeds, sunflower seed kernels, flax seed, pure vanilla extract, sea salt and cinnamon, and in a 25g cookie, there are 13 g of carbs, only 3 of which are sugars, balanced with 3 g of protein (sodium 45 mg, total fat 8 g, only .5g of which is saturated).  Plus, they are delicious.  So, if you’re one of those types of people really turned-off by cutesy “girl-power” type design, please overlook it in this case.  I’m glad I did.

    Sounds good I’ll try it out. What are your thoughts on canola oil?

    Not crazy about it. I’d prefer high quality, unrefined coconut oil.
